Turn Your Southwest Salad into a Wrap

We've got all the Crunchy Southwest Salad Kit flavor but in a wrap, for you to enjoy when you're on the run or want a picnic outside! The easy-to-make recipe combines some of our favorite things here at the farm and is sure to be your go-to lunch or dinner. Check out our recipe below.  

LGF Southwest Salad

Ingredients:

  • Living Greens Farm® Crunchy Southwest salad kit 
  • Boneless chicken breasts 
  • Limes 
  • Canola Oil 
  • Chilli powder 
  • Paprika 
  • Cumin 
  • Onion powder 
  • Garlic powder 
  • Flour tortillas 
  • Onion
  • Tomatoes 
  • Sweet corn 
  • Black beans 
  • Avocado 
  • Salad and pepper

Create the Perfect Taco Seasoning: 

  • In a small bowl mix together:
    • 2 teaspoons salt 
    • 2 teaspoons chilli powder
    • 2 teaspoons paprika 
    • 2 teaspoons cumin
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • 1 teaspoon pepper
  • After mixing - place seasoning in a zip lock bag

Cook the Taco Chicken: 

  • Place 1 ½ lb of chicken in a zip lock bag with the taco seasoning
  • Cut lime in half and squeeze in the lime juice 
  • Tightly close the zip lock bag - and mix taco seasoning, lime juice and chicken together so the mix is covering the chicken 
  • Place chicken on the grill or in the oven
    • Grill Directions:
      • Let the chicken cook on one side of the heated grill for 5-8 minutes, flip the chicken and let the other side of the chicken cook for another 5-8 minutes
      • Make sure the chicken is fully cooked through to 165 degrees internal temperature before removing
    • Oven Directions:
      • Preheat the oven to 400 degrees 
      • Let the chicken cook on one side of the heated grill for 5-8 minutes, flip the chicken and let the other side of the chicken cook for another 5-8 minutes
      • Make sure the chicken is fully cooked through to 165 degrees internal temperature before removing
      • Let the chicken rest for 10 minutes before cutting it into bite-size pieces 

Prepare The Remaining Ingredients:

  • Dice the 1 large onion
  • Dice the tomatoes 
  • Chop 1 large avocado 
  • Drain and rinse 1 can of sweet corn 
  • Drain and rinse 1 can of black beans

Mix It All Together:

  1. In a large bowl place the Living Greens Farm Crunchy Southwest salad kit ingredients 
  2. Add the chopped onion, tomatoes, avocado, and chicken into the bowl
  3. Place the sweet corn and black beans into the bowl 
  4. Mix up the dry ingredients 
  5. Drizzle the Living Greens Farm ranch dressing over the salad 
  6. Mix it all up so the dressing is distributed evenly 
  7. Place 4 flour tortillas out 
  8. Evenly distribute the salad between the tortillas 
  9. Wrap up the tortillas with the salad ingredients in the wraps 
  10. Enjoy!
